From My Kitchen| Mexican Fiesta


 

For the 3 month anniversary of my blog I am sharing this Mexican recipe my mom makes us on the days she wants to guarantee everyone’s satisfaction with her meal choice, this is also my sister’s favorite. Its really easy to make, and very kid friendly. Try it, you will enjoy it!

For this recipe you will need:

 

Seasoned Chicken

1 kg Chicken cut into cubes (diced)

Fresh ginger –2cm grated

1 Green pepper

2 tsp Curry powder

2 cloves garlic

1 Tbs Olive oil

 

Bean Dip

2 cans kidney beans

400ml cream (I use 3% extra light cream to cut on calories, you can use the one you like)

2 cloves garlic cut into small pieces

2 tsp tomato paste

1Tbs Olive Oil

pinch of salt

pinch of white pepper

On the side…

Bag of Nacho Chips (I use baked chips to cut on calories)

 

Directions

To  make it easier and instead of grating things separately, I add all the chicken seasoning ingredients to a blender and blend them until well grinded, then I add them to the chicken and mix them all up. Put the oil in a pan then add the seasoned chicken to it and keep stirring until thoroughly cooked.

While the chicken is cooking, add the garlic of the bean sauce to another small pot and fry them in the olive oil until tender, add the cream and the tomato paste until well blended and light pink in color. Add the salt, pepper, and the drained and washed kidney beans. This sauce will be a hit, next time you might want to add the quantity of the beans and the sauce, I personally even like it alone:)

The meal is now ready, chicken next to the beans dip and served with the nacho chips, you will love it, guaranteed 😉
